Sweet Potato Stew

Hearty and healthy stew with sweet potatoes, carrots, sweet onion, celery, tomatoes and lots of spices brought together in your slow cooker!

Ingredients

3 medium sized sweet potatoes, chopped

6 stalks of celery, chopped

1 small sweet onion

6 medium carrots, chopped

1 can (14.5 ounces) diced tomatoes, I preferr fire-roasted

1 can (15.5 ounces) low-sodium black beans, drained

1/2 teaspoon salt

1/2 teaspoon black pepper

1 bay leaf

3 - 4 cloves of garlic, minced

1/2 teaspoon paprika

1/4 teaspoon smoked paprika (optional)

1 teaspoon Worcestershire sauce

1 tablespoon fresh parsley, more for garnish

Water to cover vegetables in slow cooker, may use vegetable broth instead

Preparation

Step 1


Lightly spray the inside of the slow cooker with non-stick spray.


Step 2


Peel and chop the sweet potaotes then add to the slow cooker, along with the chopped celery, sweet onion, carrots, undrained can of diced tomatoes and drained can of black beans. Stir together.


Step 3


Add bay leaf, minced garlic, paprika, Worcestershire sauce, and fresh parsley. Add water, or vegetable broth, to fill up the slow cooker pot to just cover the vegetables (around 2 - 4 cups depeneding on the size of your slow cooker).


Step 4


Cook on low for 7 - 9 hours, or on high for 5 - 7 hours. Vegetables will be tender. I like my carrots to be a little crisp. I cooked my stew for 6.5 hours. Slow cookers cook at different temperatures so trust your cooker and adjust the temperature accordingly. I stirred the stew every 2 hours. At the 5.5 hour mark, I added smoked paprika, a few dried garlic flakes and extra salt and pepper. Make sure to add extra seasoning an hour before the end of cooking time so the stew absorbs the flavors.


Step 5


Stir the stew and lightly mash the sweet potatoes to thicken the stew. Don't skip this step because it makes it thicker and heartier. Top with fresch parsley or other favorite toppings.


Step 6


Store in the refrigerator for up to 5 days in a sealed container, or freeze for up to 3 months.

Notes

  • For natural sweetness and a deeper earthy flavor, use a combination of purple, white , yellow and orange carrots.

  • You can add any type of vegetable or spice, which is the beauty of soup. Get creative!
