Apple Pie

Winter apples, cinnamon, nutmeg and ginger in a buttery crust!
Ingredients
PIE CRUST
1 Simply Recipes double-crust 9-inch pie
PIE FILLING
1⁄2 cup granulated sugar
1⁄2 cup light brown sugar
3 tbsp + 1 tsp all-purpose flour
11⁄4 tsp ground cinnamon
1⁄4 tsp ground ginger
1⁄4 tsp ground nutmeg
6-7 cups apples peeled, thinly sliced
1 tbsp lemon juice
1 tbsp + 2 tsp unsalted butter
1 large egg white
granulated or sparkling sugar
Preparation
PIE CRUST
Step 1
Make Simply Recipes' dough according to directions.
PIE FILLING
Step 2
Combine the sugars, flour and spices in a small bowl; set aside.
Step 3
In a large bowl, toss apples with lemon juice. Add sugar mixture; toss to coat then put bowl in refrigerator.
Step 4
Roll out one disk of dough, line 9-inch pie plate with dough, then trim edges and fold over to create a ridge.

Step 5
Pour in apple mixture; dot with butter.

Step 6
Roll out remaining dough to cover pie or use cookies cutters/stampers to make a design. If covering pie top completely, cut slits in pastry to vent during cooking.

Step 7
Beat egg white then brush over the top of the pie. Sprinkle with granulated sugar, or sparkling sugar.

Step 8
Cover edges loosely with foil. Bake at 375° for 25 minutes. Remove foil and bake another 25-30 minutes or until crust is golden brown and filling is bubbly. Cool on a wire rack.

Notes
Oven temperatures vary so adjust baking time if needed.
